Milkfish grown in saltwater have sweeter, more flavorful, firmer, and cleaner flesh than fish grown in ponds. With fewer micro-organisms contaminating the flesh, the fish also has a longer shelf life when harvested. The fish are fed with the right amount of protein and nutrients at every stage of their development. Fisher Farms controls the diet of its catch and uses 100% high protein feeds to ensure high-quality fish meat.The company’s methods are also environment-friendly because its growers use just the right amount of feeds – there is no excess to pollute the environment. Moreoever, FFI’s aquaculture processes help prevent the onset of fish kill caused by the depletion of oxygen in the water.To date, Fisher Farms has the largest number of sea fish cages in the Philippines. While majority of its business is driven by its bangus or milkfish products, FFI is also in the business of growing and processing other species such as tilapia, pompano, and shrimp.HIGH QUALITY AND SANITATION STANDARDSFisher Farms takes every effort to maintain the quality of the fish right out of the water. It puts its fish in chilled water tanks to maintain the cold chain and to preserve freshness. Because the fish float freely in water, they aren’t compressed or compacted in any way so they get to the processing plant as firm and as wholesome as can be.Control measures are implemented all throughout the processing plant to guarantee product quality and safety. Fisher Farms’ personnel are trained to sort and clean fish with as little handling as possible to preserve the firmness of the fish flesh. The plant working environment is chilled to 5 degrees Celsius to preserve meat texture and prevent deterioration. After being deboned, the fish undergo automated processing that ensures product consistency and minimizes contamination. Fisher Farms’ processing and sanitation measures are constantly audited by certifying bodies that check the company’s compliance with stringent global quality standards and practices.STATE-OF-THE-ART TECHNOLOGYMost seafood processors use the blast freezing method, which takes 4 to 6 hours to completely freeze a batch of fish. The slow freezing allows large ice crystals to form inside the fish flesh, thereby affecting the texture and flavor of the finished product.Fisher Farms, on the other hand, uses the individual quick freeze (IQF) technology developed in Europe. IQF quickly brings fresh fish down to the ideal temperature of -18 degrees Celsius in as little as 30 minutes. This process makes a big difference in keeping the freshness and wholesome taste of Fisher Farms products.In addition to its state-of-the-art freezing technology, Fisher Farms also uses world-class smoke houses and spices from all over the world to guarantee superior flavor and taste.
